Yogurt Parfaits with Granola

Afternoon snacktime...yogurt parfaits...layered with back to Nature Sunflower & Pumpkin Seed Granola, chopped bananas, three different flavors of yogurt - blueberry, keylime, and banana strawberry, and flax meal sprinkled on top. I use coconut milk yogurt (SoDelicious brand) whenever possible - in smoothies, baking, parfaits, etc. They don't like the coconut variety as well as the soy, but when I mix it with other things, they can't tell the difference.

We love this type of granola. We eat it as cold cereal with plant milk or just eat it plain, straight out of the bag.

  2. I <3 the coconut milk yogurt too! Parfaits are great this time of year. I might have to make one for an afternoon snack! :)

  4. These look great. I wish I could find a better soy yogurt around but my search is unsuccessful. The one your using sounds great though.

  5. I still need to try this coconut yogurt. I've never been a fan of the soy. This sounds like a nice summer dessert. Do you keep it cold in the fridge or serve at room temperature?
